1/2 White - 1/2 Whole Wheat Bread

Yield: 3 loaves. Time: approx 4 hours

Ingredients: 
4 1/2 cups warm water
7 tsp salt
generous 1/3 cup butter flavored shortening (or butter)
3 TBSP sugar 
1/3 cup honey*
4 1/2 tsp (2pkg) Rapid Rise yeast
bread flour (~6 cups)
wheat flour (~6 cups)

Method:
  1. Combine all ingredients except flour, sprinkle yeast on water, (no need to let it proof).
  2. Add white flour and whole wheat flour gradually, in equal portions and mix until doughy and still a bit sticky.
  3. Knead for 10 - 15 minutes. 
  4. Let rise until twice it's original size, in a greased bowl. Punch down and knead again.  
  5. Divide into 3 sections, form to fit loaf pans. Press into greased pans, flip to expose greased top, then press to fit again. 
  6. Let rise again. 
  7. Bake 325° F. for 1 hour.
  8. Turn from pans onto cooling racks, and grease all crusts with shortening or butter to soften, otherwise, crusts will be hard when cool.  
    * Sugar Substitute: 
     -- 1/3 cup honey = (~ 1/2 cup sugar (slightly less)  +  ~ 1.5 TBS water)
     -- 1 Cup honey = (1 1/4 c sugar + 1/4 water)
