Jambalaya (Rice, Beef and Tomato) - Serves 4


We had this for dinner tonight, very very good!

4 strips bacon (or more, yummy)
2/3 cup diced celery
2/3 cup diced onion
1 lb. lean ground beef
2 tsp. Worcestershire sauce
1 tsp. mustard
1/4 cup ketchup
1 tsp. minced garlic
3 tsp. salt
1/2 tsp. black or hot pepper
5 cups cooked rice
1 can tomato or equal amount diced (14 oz)
1 can tomato sauce (15oz)


Method:
1. Fry bacon and remove from pan
2. Saute celery, onion, and beef in bacon drippings.
3. Add Worcestershire sauce, mustard, ketchup, garlic, salt, and pepper.
4. Spread cooked rice on bottom of 9" x 13" casserole dish.
5. Spoon tomato over rice and then meat mixture. (including meat grease)
6. Pour tomato sauce over meat mixture
7. Sprinkle with crumbled bacon
8. Cover and bake in a preheated over at 350 degrees F. for 30min.
