Ingrediants:
1 1/2 cups flour
2 tsp baking powder
1/4 tsp salt
2 eggs
1 tbsp melted butter
1/2 cup milk
2 cups cooked and crushed pumpkin
1 cup oil for deep frying

Corn Fritters: Omit milk and pumpkin, add 1 cup cream style corn
Plantain or banana fritters: add 2 cups chapped firm, ripe plantain or rip bananas in place of pumpkin

Ingrediants:

2 cups cooked and crushed pumpkin
1 cup oil for deep frying
Method:
- Combine flour, salt, baking powder.
- Beat eggs until fluffy
- Add beaten eggs, melted butter, ad milk. beat with fork until smooth
- Stir in pumpkin and add more milk or flour if necessary. Batter should be of a dropping consistency.
- Drop by teaspoon into preheated deep fat at 375 degrees and fry for 4-5 minutes or until eavenly browned
- 1 tbsp of butter to oil to prevent splattering
- tastes good with powdered sugar
