Pumpkin Fritters

Makes 30

Ingrediants:
1 1/2 cups flour
2 tsp baking powder
1/4 tsp salt
2 eggs
1 tbsp melted butter
1/2 cup milk
2 cups cooked and crushed pumpkin
1 cup oil for deep frying

Method:
  1. Combine flour, salt, baking powder.
  2. Beat eggs until fluffy
  3. Add beaten eggs, melted butter, ad milk. beat with fork until smooth
  4. Stir in pumpkin and add more milk or flour if necessary. Batter should be of a dropping consistency. 
  5. Drop by teaspoon into preheated deep fat at 375 degrees and fry for 4-5 minutes or until eavenly browned
Tips:
  • 1 tbsp of butter to oil to prevent splattering
  • tastes good with powdered sugar 
** Original Recipe calls 1/4tsp chopped hot pepper

Variations
Corn Fritters: Omit milk and pumpkin, add 1 cup cream style corn
Plantain or banana fritters: add 2 cups chapped firm, ripe plantain or rip bananas in place of pumpkin
