2 TBSP olive oil
1 medium onion, chopped
2 tsp minced garlic
1 14oz can diced tomatoes*
1 14oz can tomato sauce*
1 tsp dried oregano
1 tsp dried basil
1 whole bay leaf
1/2 tsp sugar
salt and pepper to taste
Method:
- Over medium heat, sautée onion and garlic in olive oil for 3-5 minutes or until onions become translucent.
- Add tomatoes and tomato sauce, stir.
- Add herbs and bay leaves. Sprinkle in sugar, salt and pepper.
- Lower heat and simmer for 30minutes, uncovered. Stir occasionally.
*Original recipe calls for 1 28oz can crushed tomatoes, but we never have that, so we made adjustments
