Ingredients:
1 1/2 cups couscous
1 3/4 cups chicken broth (water + 2 bullion cubes)
1/4 cup olive oil
1 chicken breast, cubed
1 1/2 garlic cloves
1/4 cup diced red bell pepper
5 green onions diced
1 cup diced tomatoes
1 tbsp basil
2 pinches salt
2 pinches black pepper
1 1/2 tbsp balsamic vinegar
1/4 cup grated Parmesan cheese
Method:
Ingredients:

Method:
- Bring chicken broth to a boil, remove from heat, add couscous. Cover and let sit 5 minutes. Fluff with fork
- In a skillet, heat oil. Add the cubed chicken, garlic, green onions, peppers, basil, salt, pepper, balsamic vinegar, diced tomatoes, and basil. Cook until chicken is done.
- Stir in couscous, add Parmesan cheese.
