Grilled Chicken Fajitas

Ingredients:
2 tbsp oil
1 tbs lemon juice
1 clove garlic
1 toothpick Cilantro Essential Oil (or 1TBSP fresh chopped)
1 packet Fajitas Seasoning Mix
3-4 chicken breasts
4 green onion, diced
2 med bell peppers, sliced*
1 med onion, sliced
1 cup cherry tomatoes, cut in half
4 slices bacon
1/4 cup water
Flour Tortillas

Method:
1. Mix together first 5 ingredients into a marinade, and brush onto chicken, let marinade for 30-60min
2. Grill the chicken on a medium temperature to keep as much moisture in.
3. While chicken is grilling, slice the bacon into thin strips and cook in a frying pan.
4. As the grease begins to gather, add the green onion, bell pepper, onion, and cherry tomatoes. Cook until onion becomes translucent.
5. Remove the chicken from the grill and slice into strips, add to the frying pan.
6. Add water, and let simmer.
7. Heat up flour tortillas until soft, and spoon mixture into tortillas.

Suggested toppings: Shredded Cheese, Salsa, Sour Cream, Guacamole
* possibly grill the peppers before slicing
