BBQ'ed Bacon Chicken Ranch Pizza

Ingredients:
Dough:
1 2/3 cups water
2 tsp yeast
1/4 cup olive oil
5 cups all-purpose flour
2 tsp salt
2 TBSP Italian Seasoning
I TBSP Italian Herb extra virgin olive oil*

Sauce:
1/2 cup Ranch Dressing
1/4 cup butter
1 1/2 ounces cream cheese
1 cup heavy whipping cream
1/2 tsp garlic powder
1/4 Parmesan cheese
salt
black pepper
all purpose flour

Toppings:
Bacon
Onion
Chicken (seasoned with salt, pepper, poultry seasoning, all-purpose seasoning)
Colby Jack Cheese
Tomatoes
Spinach

Methods:
Dough:
  1. Mix water and yeast together in bowl and let stand a few minutes until yeast is disolved.
  2. Stir in olive oil and Italian olive oil, then add flour, salt, and Italian Seasoning.
  3. Knead the dough for 6-8 minutes, when kneaded, dough should form a smooth ball, feel smooth to the touch, and spring slowly back when poked.
  4. Let the dough rise until doubled (1 - 1 1/2 hours). 
Sauce (while dough is rising):
  1. Melt the butter in a small sauce pan, once melted,
  2. add cream cheese and mix until melted.
  3. add the remaining ingredients and simmer. 
  4. To make sauce thicker, add flour 1 tsp at a time until the right consistency is found.
  5. Ranch dressing is used later.
Toppings:
  1. Cover both sides of the chicken breast with the toppings listed above.
  2. Grill bacon, chicken, and onions (grill cross sections, leave 'O's together) on the grill. 
  3. Cut chicken, bacon, onions into bite sized pieces
Assembling the Pizza:
  1. Once the dough has risen, knead for a few minutes then roll out in a shape to fit your grill. The dough should be at least 1/4" thick.
  2. Heat the grill to about 200° and place dough onto grill. Cook about 5 minutes. Flip over and cook for a minute.
  3. Take off grill, making sure the cooked side is on top.
  4. Cover crust in Ranch Dressing, followed by sauce.
  5. Top the sauce in spinach, cheese, chicken, bacon, onion, and tomato.
  6. Place back on grill for another 5-10 minutes or until crust is fully cooked at cheese is melted.
