Cottage Cheese Pancakes

Ingredients
4 eggs
1 cup cottage cheese, put through food processor
2 TBSP oil
1/2 cup flour
1/4 tsp baking powder
1/4 tsp salt
1 tsp vanilla

Method

  1. Mix batter and cook thin pancakes on hot griddle.
  2. This is served folded over, or rolled with jam or fresh fruit in the middle and dusted with powdered sugar on top.
Note: Just add cottage cheese to any instant pancake mix to get moister pancake
