Dutch Oven Roasted Turkey

Ingredients:
3 Onions
8-10 lb turkey
1 orange (cut in 1/4s)
1 lemon (cut in 1/4s)
1/2 cup butter

Rub
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 teaspoons dried thyme
2 teaspoons dried rosemary
1 teaspoon dried sage
1/2 teaspoon garlic powder
4 TBS melted butter

Equipment:
12" dutch oven

Method:

  1. Slice the onions and place in the bottom of the dutch oven with melted butter.
  2. Remove the giblets, and neck (if present), rinse the turkey in cold water, drain, and pat dry. 
  3. Generously salt and pepper the cavity of the turkey, place the orange and lemon inside, then place the turkey on top of the onions in the dutch oven.
  4. Brush the top in melted butter and rub the seasonings on top. Tie the legs together loosely to hold their shape, and tuck the wing tips under.
  5. Bake for 3 hours in dutch oven use 6 briquettes underneath and 18 on top of the dutch oven* Replace coals every 45 minutes or when burnt out. (This places the oven at approx 350 degrees F)
  6. After 3 hours check the temperature of the turkey. It must read 165 degrees F before it is fully cooked
