Ingredients:
3 cups old-fashioned oats
2 cups rolled wheat (or 2 more cups old-fashioned oats)
1 cup slivered almonds
1 cup chopped cashews (or walnuts, etc)
1 cup seeds (pumpkin, sunflower, etc)
3 cups shredded un-sweetened coconut (or sweetened)
1/4 cup water
1 cup honey
1/2 cup olive oil
1 1/2 tsp teaspoon salt
1 tsp vanilla
2 cup dried fruit (raisins, cherries, cranberries, etc)
Directions:
- Preheat oven to 275 degrees F.
- In a super large bowl, combine the oats, nuts, seeds, coconut (most dry ingredients).
- In a pan: boil water, turn down heat & combine honey, oil, and salt.
- Remove from heat, add vanilla.
- Pour this combined "liquid" over your dry ingredients. mix with clean hands until it is evenly distributed.
- Scoop a thin layer of granola mixture onto broiler pans (or cookie sheets) . Cook for around 20-30 minutes, stirring every 10-15 minutes to achieve an even color. Remove from oven and transfer into a super large bowl.
- Continue this process of scooping granola onto broiler pans or cookie sheets & bake/stir until all granola is golden baked.
- While granola is still hot from oven, Add raisins/fruits and mix until evenly distributed.
