Ingredients:
1 3/4 cup mashed potatoes
2 cups warm water (use potato water if you have it)
1/4 cup melted butter
1/4 cup honey
6 cups whole wheat flour
1/2 TBSP salt
3 TBPS yeast
Method:
- In one cup warm water, add the yeast, mix until smooth and let proof (5-10 minutes)
- Mix mashed potatoes, salt, butter, honey, and remaining water until smooth.
- Add yeast water and mix well.
- Add 2 cups flour and mix until smooth, add remaining flour.
- Knead for 5-10 minutes. The dough should be slightly sticky.
- Set aside in a clean bowl and let rise until doubled (about 30-45 minutes)
- Prepare bread pans by greasing the sides.
- Punch down, and separate into two equal portions. Shape the dough and set into the bread pans.
- Allow the dough to double in size.
- Preheat oven to 350 degrees.
- Bake for 30-35 minutes.
- When it comes out of the oven, put butter or shortening on the crust to soften it.
