Whole Wheat Potato Bread

 


Ingredients:

1 3/4 cup mashed potatoes
2 cups warm water (use potato water if you have it)
1/4 cup melted butter
1/4 cup honey
6 cups whole wheat flour
1/2 TBSP salt
3 TBPS yeast

Method:

  1. In one cup warm water, add the yeast, mix until smooth and let proof (5-10 minutes)
  2. Mix mashed potatoes, salt, butter, honey, and remaining water until smooth.
  3. Add yeast water and mix well.
  4. Add 2 cups flour and mix until smooth, add remaining flour. 
  5. Knead for 5-10 minutes.  The dough should be slightly sticky.
  6. Set aside in a clean bowl and let rise until doubled (about 30-45 minutes)
  7. Prepare bread pans by greasing the sides.
  8. Punch down, and separate into two equal portions. Shape the dough and set into the bread pans. 
  9. Allow the dough to double in size.
  10. Preheat oven to 350 degrees.
  11. Bake for 30-35 minutes.
  12. When it comes out of the oven, put butter or shortening on the crust to soften it.
