Ingredients:
4 cups lukewarm water
2 TBSP yeast
4 tsp salt
4TBSP sugar
4 cups bread flour
Mix these ingredients together and let sit until they become bubbly.
In the mean time…
1 cup water: boiled - take off stove and add:
1 ¼ c Brown Sugar
2/3 c Olive oil
7 cups wheat flour
Method:
- When the first mixture is bubbly, add 1 cup of wheat flour, then some of the second mixture and beat. Repeat until the liquid is gone, and the 7 cups are used up.
- Once the wheat flour is used up, return to the bread flour and add enough until the dough can be kneading (pulls away from the side of the bowl).
- Take out of bowl, and knead on the countertop. Place in greased bread pans and let rise, until double its size.
- Bake in the oven at 350° F for 30 minutes. After 30 minutes take a brown paper bag and sprinkle water on top. Put the bag on top of the loaves of bread, and cook another 15-20 minutes. The bag helps prevent the bread from burning.
