A childhood favorite from Cynthia Cottam's kitchen
Do NOT double! Make single batches (They end up chewy every time)
Ingredients:
2 cubes butter (3 cubes*)
2 TBSP (or 1/8 cup) water (3 TBSP*)
1 cup white granulated sugar (1 1/2 cups*)
2 TBSP (or 1/8 cup) white corn syrup (3 TBSP*)
Method:
Melt butter in skillet. Boil & stir constantly, after adding remaining ingredients, until candy changes color (from a yellow to a very light tan color. You need to be paying attention). Add 1/2 cup chopped nuts if desired. Pour onto buttered slab and make indentations into squares as it cools. When cool, break into the squares you have outlined.
*Takes 5 quarts of popped popcorn. Add (1 1/2 cups) dry roasted peanuts when you take it off the stove and before mixing with popcorn.
